Baked Fish with Crushed Potatoes and Peas

Light, quick, and forgiving about which white fish is cheapest.

Ingredients

  • White fish fillets600 g
  • Potatoes800 g
  • Frozen peas300 g
  • Butter40 g
  • Lemons2 ea
  • Olive oil20 ml

Method

  1. Heat the oven to 200C. Boil the potatoes in salted water for 18-20 minutes until tender.
  2. Place the fish on a lined tray, drizzle with the oil, season, and top with thin lemon slices.
  3. Bake for 12-15 minutes until the fish flakes easily.
  4. Add the peas to the potatoes for the last 3 minutes, then drain and crush roughly with the butter.
  5. Serve the fish on the crushed potatoes with the remaining lemon squeezed over.
