Chicken Tikka High Protein Smash

All the flavour of your Friday night curry, in an easy preppable smash filler. Spiced, charred chicken tikka and boiled eggs smashed with mango chutney and lime, high protein and ready in 25 mins.

Ingredients

  • chicken breast — diced500 g
  • tikka masala paste60 g
  • eggs8 ea
  • light cream cheese40 g
  • 0% fat Greek yoghurt40 g
  • mango chutney40 g
  • red onion150 g
  • limes4 ea
  • fresh coriander25 g
  • brown bread4 slice
  • chilli flakes — optional3 g

Method

  1. Heat the grill to medium-high. Dice the chicken breast into 2-3cm cubes. In a bowl, mix the chicken with the tikka paste and half the yoghurt until fully coated, then season generously with salt. If you'd like extra spice, add the optional chilli flakes too.
  2. Spread the chicken out on the baking tray, smooth side down and rougher side facing up. Grill in oven on max heat for 10-15 mins without turning, until fully cooked with slightly charred edges.
  3. Meanwhile, bring a pan of water to the boil. Once boiling, carefully lower in the eggs and cook for 8 mins. Transfer to a bowl of cold water to cool, then carefully peel off the shells.
  4. Thinly slice the red onion and roughly chop the coriander. Add the grilled chicken, peeled eggs, coriander, cream cheese, remaining yoghurt and mango chutney to a large bowl. Add most of the red onion, saving a little back for serving, along with the juice of half the limes. Season with salt and pepper and use a pizza cutter to chop everything together until nicely smashed and mixed.
  5. Toast the bread and divide the smash between the slices, scatter over with the remaining pickled red onion, then cut the remaining limes into wedges and serve on the side.

    • 600 g Salmon fillets instead of chicken breast

    Coat the salmon fillets in the tikka paste and yoghurt and grill for 8 to 10 minutes until just cooked, then flake rather than chop.

    Paneer Tikka High Protein Smash

    • 400 g Paneer instead of chicken breast

    Cube the paneer, coat in the tikka paste and yoghurt and grill for 8 to 10 minutes until charred at the edges, a little less than the chicken.

  • Gluten-free

    • 160 g Gluten-free bread instead of brown bread

    Toast the gluten-free bread a little longer for a sturdier base.

  • Dairy-free

    • 40 g Dairy-free cream cheese instead of light cream cheese
    • 40 g Coconut yoghurt instead of 0% fat Greek yoghurt
