Cacao Date Energy Balls

Ingredients

• rolled oats — 1 cup90 g
• cacao powder — 2 tbsp16 g
• fresh Medjool dates — pitted12 ea
• desiccated coconut — ¾ cup70 g
• maple syrup — 2 tbsp40 ml
• desiccated coconut — 2 tbsp; extra, for coating14 g

Method

1. Add the rolled oats, cacao powder, dates, coconut and maple syrup to a food processor.
2. Blitz until the mixture forms a sticky dough that holds together when pressed between your fingers.
3. Roll into bite-sized balls.
4. Coat each ball in the extra desiccated coconut.
5. Store in an airtight container in the fridge for up to one week.
