Buffalo Chicken Grilled Cheese

Leftover chicken tossed in a quick homemade Buffalo sauce, stuffed between American cheese and sourdough with a crispy mayo crust.

Ingredients

  • American cheese4 slice
  • sourdough bread2 slice
  • cooked chicken — chopped140 g
  • mayonnaise15 g
  • blue cheese dressing — to dip30 ml
  • salted butter — melted30 g
  • hot sauce60 ml
  • Worcestershire sauce — ½ tsp2.5 ml
  • garlic powder0.25 tsp

Method

  1. Preheat a skillet over medium heat for 2 to 3 minutes.
  2. Mix the melted butter, hot sauce, Worcestershire sauce and garlic powder together.
  3. Pour the Buffalo sauce over the chopped or shredded cooked chicken and gently stir so every piece is coated. If using leftover chicken, warm it first (a couple of minutes in the microwave, covered, with a splash of broth or water) so the sandwich is hot all the way through.
  4. Spread mayonnaise over the outside of the bread slices.
  5. Lay the American cheese on the inside of both slices of bread.
  6. Add the warm saucy chicken to one slice and close the sandwich with the other slice.
  7. Toast the sandwich in the preheated skillet for 2 minutes on medium heat.
  8. Flip and toast for another 2 minutes, or longer on each side until golden and the cheese has melted.
  9. Slice in half and serve with blue cheese dressing for dipping.

    • 140 g Chickpeas instead of cooked chicken
    • 2.5 ml Vegetarian Worcestershire sauce instead of worcestershire sauce

    Roughly smash the drained chickpeas and warm them in the Buffalo sauce in the skillet for 2 minutes before assembling; the toasting time is unchanged.
